Experience French-inspired cuisine from all regions of France. Choose from a variety of hors d’oeuvres, including steak tartare and Parmesan-and-basil asparagus tempura. Stop by and try the Snake River Farms corned beef with sauerkraut on marbled rye, or moules frites (fries and mussels). Enjoy Happy Hour seven days a week from 3pm-6:30pm. Lunch is Mon-Fri starting at 11am and features fresh salads, burgers and our Brasserie Foot-Long Hot Dog smothered in Mornay sauce with field greens, roasted-pepper relish, two types of Dijon mustard and aged balsamic on an artisanal bun. Other entrées include pan-roasted halibut with lemon-butter caper sauce and salade Niçoise. Saturday and Sunday brunch features traditional breakfast egg dishes and breakfast sandwiches on a toasted bialy from the in-house bakery. Recently opened in Niwot, just minutes from Boulder, Colterra features northern Italian and southern French cuisine. Using local produce (some from its own garden) and sustainable fish and meats, Colterra offers a variety of dining options. Try the “small plate” format and sample several courses, each paired with the wine of your choice. After an opener of duck-liver pâté with bronzed apples, or sautéed scallops with grilled heirloom squash, bacon and crème fraîche, settle into the seven-hour braised Coleman Ranch lamb shank, or the King Canyon buffalo rib-eye with roasted heirloom squash and oyster mushroom potato gnocchi, braised local spinach and a port wine reduction.
